Recipe : Campfire pot roast


Ingredients for Campfire pot roast
4lb.Blade pot roast, 1 1/2 inch thick
2 Branches celery, sliced on bias
6 Small whole carrots
1 Medium green pepper, cut in rings
2 Medium onions, quartered
2 Firm medium tomatoes, cut in wedges

Preparation :

Brown roast on greased grill, over hot coals about 15 minutes. Season well with salt and pepper. Tear off two sheets of aluminum foil, each twice the size of the roast. Place aluminum sheets next to each other (overlapping slightly), fold one sheet over other, creating one large sheet (enlarging width). Place meat on fold of aluminum foil, cover with vegetables, generously salt and pepper. Fold foil over and seal securely. Bake over low coals for two hours, or until tender.
