Preparation :

Start by sifting the sugar three times. Combine cream of tartar and flour, sift seven times.

Next, beat eggs stiff, adding sugar gradually. Next. stir in the flour quickly with a wooden spoon.

Bake slowly and steadily in an ungreased tin. When done, turn out on a platter for frosting.
