Recipe : Eggs Mexicana


Ingredients for Eggs Mexicana
2Tbsp.Butter
4Tbsp.Onion (finely chopped)
4Spanish peppers (cut into strips)
1/2ptTomatoes (cut in pieces)
Pepper and salt
Red pepper
Eggs

Preparation :

Melt the butter in a saucepan and add the onion. Stir until the onion is soft, but not brown.

Next, add the Spanish pepper strips, tomatoes, pepper and salt and a dash of red pepper. Cook slowly.

Boil desired amount of eggs. When eggs are ready place them on a serving dish and, put two tablespoons of the sauce on each side of it.

Serve at once.
