Recipe : Rice with peas


Ingredients for Rice with peas
1/2c.Rice (uncooked)
2Tbsp.Butter
1Small Onion (chopped)
1Small piece of ham fat
1/2Small onion (chopped)
Parsley (chopped)
3Tbsp.Olive Oil
Salt
Pepper
1Tbsp.Parmesan cheese (grated)
1canGreen peas
Water or broth

Preparation :

Place the small onion into a saucepan with half the butter. Cook until the onion is brown. Add the rice and fry until the rice is dry.

Add hot water, a ladleful at a time. Do not to let the rice boil too hard, as it would become hard in the middle and floury around the edges.

Once the rice is cooked, move the saucepan to the back of the stove. Add the remaining butter.

Prior to moving the saucepan to the back of the stove, add a little grated Parmesan cheese and the peas.

Prepare peas as follows:

Add olive oil and salt and pepper to the the chopped ham fat, 1/2 small onion, and parsley. Place in a saucepan.

Once the onion is colored, add green peas. When the peas have absorbed all the olive oil, add enough water (or broth) to cover and cook until peas are soft.

Mix the peas with the rice, add the Parmesan cheese, and serve.
