Ingredients for Spagnuola tomatoes
4Large ripe tomatoes
1Small piece of butter
4Raw eggs

Preparation :

Boil the tomatoes and drain them well. Then pass them through a fine hair sieve.

Place tomatoes in a stew pan and stirr until the liquid is evaporated. Then add the small piece of butter and the raw eggs, stirring them quickly with the tomatoes.

Once the eggs are cooked, place mixture on a serving dish and serve hot.
