Preparation : Boil the unripe tomatoes for a few minutes. Cut off the stems and remove the insides, removing as many seeds as possible.
Fill them with the cooked rice and chopped up mushrooms.
Poor over them the yolk of two eggs (1/2 egg yolk per tomato) and place in an oven to color. Serve hot. This recipe is not included in the cookbook.
