Recipe : Shrimp toast


Ingredients for Shrimp toast
1pkg.Frozen cooked shrimp (12oz.)
1 egg white
1tsp.Cornstarch
1tsp.Minced green onion
6 Very thin slices of white bread
2Tbsp.Cooking Sherry
1tsp.Salt
1/8tsp.Ground ginger
24 Parsley leaves

Preparation :

About 1 hour before serving : in blender at medium speed, blend cooked shrimp until finely chopped. In bowl, mix shrimp with egg white, cooking sherry, cornstarch, salt, green onion and ground ginger. Set aside. Cut crust from bread and cut each slice into 4 triangles. Spread with one heaping teaspoon shrimp mix. Gently press a parsley leaf on each. In an electric skillet, heat 1 inch of oil to 325F. Place 5 or 6 triangles shrimp side down in oil. Cook untill brown, about three minutes. Turn bread, cook one minute longer. Remove to paper towel, keep warm. Serve hot.
