Preparation : Cut tops of tomatoes, scoop out pulp. Chop tops and pulp, drain and set aside. Peel onions. Cur off tops of green peppers. Remove seeds and membrane. Precook onions and pepper in boiling salted water for 5 minutes. Drain and cool. Remove centers from onions. Chop 1/4 of onion center and reserve. Brown beef in skillet, drain of fat. Return to skillet and add reserved tomato, onion, breadcrumbs, two Tbsp. catsup, parsley and salt and pepper. Stuff tomatoes, onions and peppers with mixture. Place stuffed onions and pepper in hot oil in skillet. Add 1/3 cut catsup and water to skillet. Cover and simmer 10-15 minutes. Add stuffed tomatoes to skillet. Cover and continue to simmer 15-20 minutes more. Sprinkle cheese over vegetables. Cover, heat until cheese melts.
