Preparation : Beat eggs until light and frothy. Add oil, sugar, zucchini and vanilla. Combine dry ingredients and add to egg mixture. Stir until just blended. Bake in 2 greased and floured loaf pans, at 325F for 1 hour, or until toothpick comes out clean.
