Recipe : Zucchini nut bread


Ingredients for Zucchini nut bread
3 Eggs
2c.Sugar
2tsp.Vanilla
1tsp.Baking soda
1tsp.Salt
1/2c.Chopped nuts
1c.Oil
2 1/2c.Grated zucchini
3c.Flour
1tsp.Baking powder
2 1/2tsp.Cinnamon

Preparation :

Beat eggs until light and frothy. Add oil, sugar, zucchini and vanilla. Combine dry ingredients and add to egg mixture. Stir until just blended. Bake in 2 greased and floured loaf pans, at 325F for 1 hour, or until toothpick comes out clean.
